ABOUT

The Tosashiragiku Tokubetsu Junmai is the heart of the Tosashiragiku lineup — a pure-rice sake designed above all else for the dining table. The brewery's flagship Tokubetsu Junmai expression is brewed primarily with Kochi Prefecture's own sake rice, Gin no Yume, alongside other locally cultivated varieties depending on the season and batch. The "tokubetsu" (special) designation reflects both the use of premium sake-specific rice and the meticulous hand-crafted production approach of the brewery. Sento Shuzo has won consecutive awards at the Annual Japan Sake Appraisal, and the Tokubetsu Junmai is central to that track record. The brewery also produces a popular "Zansin" (Slashing Dry) Tokubetsu Junmai series featuring different local rice varieties including Hattan Nishiki and Kochi's newly developed Kochi Koiku Sake No. 80, each expressing the terroir of a distinct Kochi-grown rice variety.


AROMA & TASTE

Fresh and lively on the nose with clean fruit aromatics — characteristic of the Tosashiragiku "Fresh and Juicy" house style. The Gin no Yume rice delivers a bright, clean acidity that is a defining feature of Kochi sake, with a smooth body and a satisfying, stretching finish (nobiyaka) that does not linger excessively. Ideal as a food sake: the acidity cuts through richness and the flavour opens further with each bite. Best served chilled, though equally pleasurable at room temperature with

food. Pairs beautifully with grilled fish, sashimi, tofu, light meat dishes, and the bold bonito forward cuisine of Kochi.
