ABOUT

The Buyu Junmai Ginjo is the brewery's premium no-alcohol-added expression, brewed using 100% Yamadanishiki rice polished to 55%. It represents the flagship of Buyu's modern ginjo style — the result of the brewery's commitment to three-season brewing and careful fermentation control. Yamadanishiki, widely regarded as the king of sake rice, is grown in Hyogo Prefecture and prized for its large starchy core, low protein content, and ability to produce sake of exceptional clarity and ginjo aroma. The striking black label with gold "Buyu" calligraphy and the "Junmai Ginjo / Buyu Brewery / Since 1867" neck medallion give this bottle a bold, premium presence.


AROMA & TASTE

On the nose, a fresh and clean fruit-forward aroma reminiscent of La France pear, lychee, and a gentle melon sweetness — described by reviewers as "adult ramune (fizzy lemonade)" in its juicy clarity. On the palate, a lightly effervescent, smooth entry gives way to a refreshing sweet-umami balance. The acidity is bright and lively, lifting the flavours without heaviness. The finish is clean and dry, with a soft lingering quality. Excellent chilled, ideally in a wine glass to showcase the aromatic complexity
